Seafood Course

Fish Course 3-hours R650 per person

 

Fish:  salmon or tuna, hake and skate

 

Techniques learnt:

  • Pan-frying and roasting hake
  • Grilling salmon or tuna, tilapia
  • Poaching and searing skate
  • Making dressings and sauces to go with the above

 

These are dishes you could be making:

  • Pan-Fried and Roasted Hake with Lemon Butter Sauce
  • Grilled Salmon or Tuna with Fennel and Orange Dressing
  • Skate with Beurre Noisette and Capers
  • Goujons with your own Homemade Mayo
  • Tilapia with burnt Cajun Butter Sauce
