Fish Course 3-hours R650 per person
Fish: salmon or tuna, hake and skate
Techniques learnt:
- Pan-frying and roasting hake
- Grilling salmon or tuna, tilapia
- Poaching and searing skate
- Making dressings and sauces to go with the above

- Pan-Fried and Roasted Hake with Lemon Butter Sauce
- Grilled Salmon or Tuna with Fennel and Orange Dressing
- Skate with Beurre Noisette and Capers
- Goujons with your own Homemade Mayo
- Tilapia with burnt Cajun Butter Sauce
